 为规范食品卫生安全监督,扬州市商贸部门与卫生部门联合启动了餐饮企业生产经营档案和餐饮业食品安全监管信用档案的两档建设工作。据了解,该市共有1500多家餐饮企业将在年内建好两档。此举意味着,今后的餐饮食品操作流程,及从业人员的生产规范将被记录在案。

  据介绍,由各餐企自建的档案包含从业人员健康体检、供应商资质审核、原料采购验收索证索票、食品贮存、餐具用具清洗消毒、卫生检查、大型集体会餐留样、操作规程及岗位责任、废弃物管理等多项制度。以前发生餐馆集体性食物中毒事件,功能                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                           由于没有食品采购和操作流程记载,因此,监管人员无法追查有毒食物的来源,很难对毒源进行有效控制。此次规范行动要求,各餐企自建的档案工作必须在今年年底前全部建成归档,否则,主管部门将对其严查重罚。

  餐饮业食品安全监管信用档案将全面记载餐饮企业的卫生许可、员工健康及培训、卫生分级管理等级、日常卫生、抽检结果、行政处罚及消费者投诉等内容。
